You can choose to par-boil the potatoes or skip that step, I have you covered for both. (Although if you have time, it is worth the extra 10 minutes of parboiling, so you can fluff up the potatoes to achieve that super crispy exterior).
If you don’t have time to parboil, though, don’t worry, as the potatoes turned out FAR better than I was expecting.
I removed the crisper plate from the basket and air-fried the roast potatoes directly on the bottom of the basket. This helped them soak up the fat on the outside of the potatoes to give you that golden brown, crispy outside.

🤔 Do You Need To Parboil Potatoes Before Air Frying Them?
It’s really up to you! If you’ve got a bit of extra time, I’d always recommend parboiling – it helps to soften the outside of the potatoes, making them fluffier and helping them crisp up in the air fryer.
However, if you’re in a hurry, this air fryer method works brilliantly without parboiling, still giving you golden, crispy roasties. Both methods give great results, so it just depends on how much time you have!
🥘 Ingredients You Will Need
Here is a brief overview of the ingredients needed to make these air fryer roast potatoes. As written, the recipe is free from the top 14 UK allergens.

- Potatoes - Potatoes with a high starch content are best to help give you that fluffy interior yet crispy outside. My favourite potato to use is the Maris Piper. Some other good options are King Edwards or Russets.
- Olive Oil - This helps to give that crispy golden brown finish on the outside of the potato.
- Seasoning - I have used a mixture of garlic powder and salt & pepper.

✏️ How to Make Air Fryer Roast Potatoes

Step 1: Start by peeling your potatoes and cutting them into chunks. Roughly three chunks per potato, depending on the size of the potato.
Try and make them evenly sized, to help them cook evenly.
Parboil Option
Step 1a: If you have some extra time, parboiling the potatoes is a great step to make them even crispier on the outside while keeping them fluffy inside.
Place the potato chunks in a saucepan and cover with cold water. Add a pinch of salt, then bring the water to the boil. Parboil for 7-10 minutes, until the outsides are softened but the potatoes are still firm inside.
Step 1b: Drain the potatoes well, then give the pan a gentle shake to roughen up the edges of each chunk—this helps to create a crispy texture on the outside during air frying.
Allow the potatoes to steam dry for a few minutes, which will also help with crispiness.
Step 1c: Transfer the potatoes to a mixing bowl and coat them in the olive oil, along with the garlic powder, salt, and pepper. Stir well until the seasoning has covered the potatoes.
Step 1d: Place the potatoes directly into the bottom of your Ninja Dual air fryer, removing the crisper plate.
Step 1e: Air fry at 190°C/375˚F for 20 minutes, shaking the basket a couple of times so they cook evenly. Serve immediately while hot and crispy!
No Parboil Option
Step 2a: If you’re short on time, you can skip the parboiling step and still enjoy crispy roast potatoes.
In a mixing bowl, toss the raw potato chunks with olive oil, garlic powder, salt, and pepper, making sure they’re all evenly coated.
Step 2b: Place the potatoes directly into the bottom of your Ninja Dual air fryer, removing the crisper plate.
Stop 2c: Air fry at 190°C /375˚F for 25-30 minutes, shaking the basket halfway through to ensure even cooking.
Serve immediately for golden, crispy roast potatoes!
🤔 Can I Cook These Potatoes In A Different Air Fryer?
Of course! The temperatures and timings have all been tested in my Ninja Dual Air Fryer, but you can certainly make them in any type of air fryer.
Bear in mind that all air fryers cook differently, so you may need to adjust the temperature and timings slightly.
If you have a preheat option on your air fryer, you will also need to reduce the cooking time by a couple of minutes.

- ✔️ Steam Dry: After parboiling, let the potatoes steam dry for a few minutes to remove any excess moisture. Dry potatoes will crisp up better in the air fryer, so don’t skip this step if you’re parboiling.
- ✔️ Don’t Overcrowd the Basket: As with anything you cook in the air fryer, avoid overcrowding the air fryer basket. This allows air to circulate around each potato piece, which makes them even crispier. Use both drawers or cook in batches if necessary & dont forget to remove the crisper plate!
- ✔️ Serve Straight Away: Air fryer roast potatoes are at their crispiest right after cooking, so serve them immediately. The longer they sit, the more likely they’ll soften as they cool.
- ✔️ Use A Different Fat: For extra special potatoes, why not try using duck fat or goose fat instead of olive oil?

Ninja Air Fryer Roast Potatoes
Ingredients
- 750 g (1.6 lb) white potatoes like Maris Piper
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
