There's no layering, no extra pans, and no pre-cooking the pasta, everything just goes into one pan and cooks together!
As it simmers, the sauce turns rich and thick, the pasta softens perfectly, and once you stir through the cream and melt the cheese on top, it's honestly just as good as a traditional lasagne but so much easier.

- Beef Mince - If you are using a mince with a higher fat %, you may want to drain any excess fat after browning.
- Onion, Carrot & Celery - The classic soffritto base.
- Garlic - Adds loads of flavour.
- Beef Stock - Helps to cook the pasta and create a rich sauce.
- Tomato Purée - Gives a deeper, richer tomato flavour.
- Chopped Tomatoes - The base of the sauce.
- Mixed Herbs - Adds that classic Italian-style flavour.
- Lasagne Sheets - Broken up and cooked directly in the sauce. If you use fresh sheets, reduce the cooking time slightly.
- Double Cream - Makes the sauce creamy in place of the traditional white sauce.
- Mozzarella & Cheddar - For that melty, golden cheesy topping.

✏️ How To Make One Pot Lasagne

Step 1:
Heat a large pan with a drizzle of oil over a medium-high heat. Add the beef mince and cook for 5-6 minutes, breaking it up with a spoon as it browns. If there's a lot of fat in the pan, just drain a bit off so the sauce doesn't end up greasy. (photo 1)
Step 2:
Add the chopped onion, carrot and celery straight into the pan. Cook for around 5 minutes until everything starts to soften, then stir in the garlic and cook for another 30 seconds until fragrant. (photo 2)
Step 3:
Stir in the tomato purée and mixed herbs, then pour in the chopped tomatoes and beef stock. Give it all a good stir and season with salt and pepper. (photo 3&4)

Step 4:
Add the broken lasagne sheets and gently push them down into the sauce so they're mostly covered. Don't worry if a few edges are sticking out; they'll soften as it cooks. (photo 5)
Step 5:
Bring everything to a gentle simmer, pop a lid on and cook for 15-20 minutes until the pasta is soft. Give it a stir every now and then to stop anything catching on the bottom, and if it looks a bit thick, just add a splash of water or stock. (photo 6)
Step 6:
Stir through the double cream - this is what makes the sauce really rich and brings everything together.
Step 7:
Sprinkle over the mozzarella and cheddar, then either put the lid back on for 5-10 minutes until melted, or pop it under the grill for a few minutes if you want that golden, bubbly top.

One Pot Lazy Day Lasagne (One Pan Lasagne)
Equipment
- Large frying pan with lid
Ingredients
- 500 g (1lb) beef mince
- onion finely diced
- 1 stick celery finely diced
- carrot finely diced
- 2 cloves garlic crushed
- 500 ml (2 cups) beef stock
- 1 tablespoon tomato puree
- 400 g (14oz) tinned chopped tomatoes
- teaspoon mixed herbs
- 250 g dried lasagne sheets 8-10 sheets
- 50 ml ( ¼ cup) double cream
- 60 g ( ½ cup) mozzarella grated
- 60 g ( ½ cup) cheddar grated
Instructions
- Add the chopped onion, carrot and celery to the pan and cook for 5 minutes until softened. Stir in the garlic and cook for 30 seconds.
- Stir in the tomato purée and mixed herbs, then add the chopped tomatoes and beef stock. Season to taste.
- Add the broken lasagne sheets and push them down into the sauce.
- Stir through the cream.
- Sprinkle over the cheese and cook until melted, either with the lid on for a few more minutes or under the grill until golden.
Notes
- No need to pre-cook the lasagne sheets - they cook directly in the sauce
- Break the pasta into smaller pieces so it cooks evenly
- Stir occasionally while simmering to stop it sticking to the pan
