One Pot Lazy Day Lasagne (One Pan Lasagne)

This One Pot Lazy Day Lasagne is the ultimate easy comfort dinner! All the classic lasagne flavours, but cooked in just one pan with no layering needed. The pasta cooks straight in the sauce, making it rich, creamy and full of flavour, with plenty of melted cheese on top.

Ingredients

  • 500 g (1lb) beef mince
  • onion finely diced
  • 1 stick celery finely diced
  • carrot finely diced
  • 2 cloves garlic crushed
  • 500 ml (2 cups) beef stock
  • 1 tablespoon tomato puree
  • 400 g (14oz) tinned chopped tomatoes
  • teaspoon mixed herbs
  • 250 g dried lasagne sheets 8-10 sheets
  • 50 ml ( ¼ cup) double cream
  • 60 g ( ½ cup) mozzarella grated
  • 60 g ( ½ cup) cheddar grated

Instructions

  • Add the chopped onion, carrot and celery to the pan and cook for 5 minutes until softened. Stir in the garlic and cook for 30 seconds.
  • Stir in the tomato purée and mixed herbs, then add the chopped tomatoes and beef stock. Season to taste.
  • Add the broken lasagne sheets and push them down into the sauce.
  • Stir through the cream.
  • Sprinkle over the cheese and cook until melted, either with the lid on for a few more minutes or under the grill until golden.

Notes

  • No need to pre-cook the lasagne sheets — they cook directly in the sauce
  • Break the pasta into smaller pieces so it cooks evenly
  • Stir occasionally while simmering to stop it sticking to the pan
  • Add a splash of water or stock if the sauce thickens too much
  • Drain excess fat from the mince to avoid a greasy sauce
  • The cream added at the end makes the sauce rich and brings everything together
  • For a golden, bubbly top, finish under the grill instead of just melting the cheese with the lid on
  • Can be made ahead and reheats well with a splash of water or stock
