This quick and simple recipe for baby potatoes with garlic and parsley butter, cooked in the air fryer, is absolutely delicious!
The mix of fresh pungent garlic, slightly peppery parsley, and creamy butter mixed through crispy potatoes is sooo tasty!

🤔 Can I Make Air Fryer Baby Potatoes In The Oven?
You sure can!
You can bake these potatoes in the oven if you don’t have an air fryer. Preheat your oven to 200°C (180°C fan) and spread the seasoned potatoes on a baking tray in a single layer.
Bake for about 30-35 minutes, turning them halfway through so they cook evenly. They should be golden brown and crispy on the outside, and tender on the inside.

- Potatoes - Baby Yukon Gold or baby russet potatoes work really well. Chop any larger potatoes in half.
- Seasonings For Potatoes - I have used a mixture of paprika, onion granules, salt & pepper to add a seasoned coating to the potatoes.
- Fresh Parsley - Chopped finely, this is added to the garlic butter. Fresh herbs are best but if you only have dried herbs, use half the amount. Note that the flavour will be different though to fresh herbs.
- Garlic - The amount of garlic used can be adjusted depending on how much you love garlic! If you prefer things a little milder just add one clove.
- Butter - You can use either salted or un-salted butter.
- Olive Oil - Or any neutral tasting oil can be used instead.

Step 1: Start by giving the baby potatoes a good rinse to remove any starch and dirt. Pat them dry with a clean kitchen towel until they're completely dry.
If you have any larger potatoes, chop them in half so they're all roughly the same size for even cooking.
Step 2: Next, in a large bowl, mix the potatoes with olive oil, paprika, onion granules, salt, and pepper.
Give them a good stir with a wooden spoon until they're evenly coated with the seasoning mix.
Step 3: Set your air fryer to 200°C (390°F) pre-heating if necessary. Place the seasoned potatoes in a single layer in the air fryer basket.
Cook them for 20 minutes, giving the basket a good shake halfway through so they all cook evenly and get that perfect crispy finish.
Step 4: While the potatoes are cooking, slightly melt the butter in the microwave until it's soft. In a small bowl, mix the softened butter with minced garlic and finely chopped parsley until well combined.
Step 5: Once the potatoes are golden brown and crispy, remove them from the air fryer.
Pour the garlic and parsley herb butter over the hot potatoes and gently stir until they're evenly coated with the delicious butter mixture.

- ✔️ I tested this recipe using my Ninja Foodie Dual Zone Air Fryer, so the recommended temperature and cooking times are based on this model of air fryer. Other air fryer brands might cook differently, so you may need to adjust the times and temperature. Keep an eye on your food and check for doneness as you go.
- ✔️ Pre-Heat: If your air fryer doesn’t have a pre-heat function you may need to add a couple of minutes to the cooking time.
- ✔️ Shake the Basket: Shake the air fryer basket halfway through cooking. This helps the potatoes cook evenly and get crispy on all sides.
- ✔️ Don’t Overcrowd The Basket: Cook in batches if necessary. If you overcrowd the basket the potatoes will not crisp up.
- ✔️ Adjust The Garlic: Depending on how much you like a garlic flavour, you may want to adjust the amount used. If you prefer a milder garlic flavour I would recommend using just one clove. Chopping the garlic rather than mincing also results in a milder flavour.

Why should I soak potatoes before air frying?
Soaking the potatoes before air frying helps to remove excess starch, which results in crispier potatoes. Simply rinse them in cold water and pat them dry thoroughly before seasoning.
These potatoes are best served fresh out of the air fryer. However, you can prepare the garlic and parsley butter in advance and store it in the fridge until needed.
Store any leftover potatoes in an airtight container in the fridge for up to 3 days. To reheat, place them back in the air fryer for a few minutes until warmed through and crispy again.
There is no harm in freezing them, however I would recommend eating them straight after serving.

Air Fryer Baby Potatoes With Garlic & Parsley Butter

- 450 g (16 0z) baby potatoes e.g baby yukon gold
- 30 g ( 1oz) butter salted or un-salted
- 2 cloves garlic use 1 for a milder flavour
- 1 tablespoon olive oil
- 1 teaspoon onion granules
- ½ teaspoon paprika
- 1 handful fresh parsley finely chopped
Instructions
