Air Fryer Baby Potatoes With Garlic & Parsley Butter

Ingredients

  • 450 g (16 0z) baby potatoes e.g baby yukon gold
  • 30 g ( 1oz) butter salted or un-salted
  • 2 cloves garlic use 1 for a milder flavour
  • 1 tablespoon olive oil
  • 1 teaspoon onion granules
  • ½ teaspoon paprika
  • 1 handful fresh parsley finely chopped

Instructions

  • Rinse the baby potatoes to remove any starch and dirt. Pat them dry with a clean kitchen towel until completely dry. Chop any larger potatoes in half, so they are all roughly the same size.
  • In a large bowl, toss the washed potatoes with olive oil, paprika, onion granules, salt, and pepper. Stir with a wooden spoon until evenly coated.
  • Preheat your air fryer ( if necessary) to 200°C (390°F). Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 20 minutes, shaking the basket halfway through so they cook evenly.
  • While the potatoes are cooking, slightly melt the butter in the microwave until soft. In a small bowl, mix the softened butter with the minced garlic and finely chopped parsley until well combined.
  • Once the potatoes are golden brown and crispy, remove them from the air fryer. Pour the garlic and parsley herb butter over the hot potatoes and gently stir until the potatoes are evenly coated with the butter mixture. Serve immediately.

Tips & Tricks
  • I tested this recipe using my Ninja Foodie Dual Zone Air Fryer, so the recommended temperature and cooking times are based on this model of air fryer. Other air fryer brands might cook differently, so you may need to adjust the times and temperature. Keep an eye on your food and check for doneness as you go.
  • Pre-Heat: If your air fryer doesn’t have a pre-heat function you may need to add a couple of minutes to the cooking time.
  • Shake the Basket: Shake the air fryer basket halfway through cooking. This helps the potatoes cook evenly and get crispy on all sides.
  • Don’t Overcrowd The Basket: Cook in batches if necessary. If you overcrowd the basket the potatoes will not crisp up.
  • Adjust The Garlic: Depending on how much you like a garlic flavour, you may want to adjust the amount used. If you prefer a milder garlic flavour I would recommend using just one clove. Chopping the garlic rather than mincing also results in a milder flavour.
  • Serve Immediately: These potatoes are best enjoyed hot and crispy straight from the air fryer. If you are cooking in advance, keep the melted butter sauce separate and only pour over the potatoes just before serving.
 
Can I Make These In The Oven?
You sure can!
You can bake these potatoes in the oven if you don’t have an air fryer. Preheat your oven to 200°C (180°C fan) and spread the seasoned potatoes on a baking tray in a single layer. Bake for about 25-30 minutes, turning them halfway through so they cook evenly. They should be golden brown and crispy on the outside, and tender on the inside.
