These Crispy Air Fryer Spring Rolls are crispy, packed with flavour and perfect for a fakeaway treat at home. Filled with pork, mixed veggies, and a homemade sauce, they’re surprisingly easy to make and totally addictive!

If your family is anything like mine, then anything crispy and hand-held disappears in seconds — and these air fryer spring rolls are no exception, just like my air fried samosas too!

They’re stuffed with minced pork, mushroom stir-fry veg and a garlicky, gingery sauce that gives big fakeaway vibes without the faff (or the deep fryer). I’ve used a supermarket bag of mushroom stir-fry mix to save time on chopping – which makes things so much easier!
You don’t need loads of ingredients, and honestly, once you’ve rolled one or two, it’s easier than it looks. Perfect as a snack, starter or on the side of your fakeaway crispy chicken — these are one of those recipes you’ll want to batch cook and freeze for when you need them.

✋ Double check all packaging for allergens ✋
- Spring roll pastry – This can be found in the freezer section of most major supermarkets or in Asian stores. If you can't find it, you can use rice paper wrappers or filo pastry instead.
- Minced pork – You can swap for chicken, turkey or veggie mince.
- Mushroom stir fry mix – Using this saves soooo much time! Found in the fresh section of the supermarket. Alternatively, you can finely chop the same amount of mushrooms, cabbage, carrots and bean sprouts.

This recipe is tested with my Ninja Foodie Dual Zone AF300UK Air Fryer, and the timings and temperatures are tailored for this model. Keep in mind that different air fryer brands may cook differently, so regularly check your food for the best results.

Making the Filling
Step 1: To make the filling, start by preparing the garlic, ginger & spring onion, so everything is ready.
Step 2: Then heat a little oil in a large frying pan or wok and gently cook your chopped garlic, ginger, and spring onions. Once that’s smelling lovely, in goes the pork. Break it up with a spoon and let it brown all over.
Step 3: Next, stir through the mushroom stir-fry mix. The bagged stir-fry vegetables save a lot of chopping and cook down quickly — about 3 to 4 minutes is usually enough, as you still want a bit of crunch.
Step 4: While that’s cooking, mix up your sauce: soy sauce, rice vinegar and cornflour. It’ll look a bit cloudy but don’t worry — it will thicken up in the pan.
Step 5: Add the sauce and let it thicken, coating the mince and veggies.
Step 6: Let it cool slightly before you move on to rolling. I like to put the mixture in the fridge for 15 minutes or so. Adding the mixture to the pastry when it's really hot will give you soggy pastry!
Assembling the Spring Rolls
This bit might look fiddly at first, but think of it like wrapping a mini parcel — neat, tight and sealed at the edges.
Step 7: Lay your pastry in a diamond shape with a corner pointing towards you. Add your filling near the bottom corner (photo 4), fold that up over the filling (photo 5), then fold the two sides inwards (photos 6&7).
Step 8: Roll upwards, tucking everything in tightly as you go, then seal the final corner with some cornflour paste. (Photos 8, 9 & 10) Done!
It’s a great job to get the kids involved in too — they love having a go, even if the shapes aren’t quite perfect. And once they’re cooked, no one will notice anyway!
🤔Do I Need To Preheat My Air Fryer?
It depends on your air fryer! Some models recommend preheating, while others don’t need it. If your air fryer manual suggests preheating, you will need to take a couple of minutes off the cooking time stated in the recipe.
It's best to check the food as its cooking to check when its ready.
💡 Lauren's Top Tips
- 🌟 Don’t Overfill The Rolls: A heaped tablespoon of filling is plenty. Too much and they’re likely to split while cooking.
- 🌟 Keep The Wrappers Covered: They dry out so quickly! Lay a damp tea towel over them while you work.
- 🌟 Let The Filling Cool Properly: Adding hot filling to cold pastry = soggy disaster. I pop mine in the fridge for 10–15 minutes.
- 🌟 Turn Halfway: Flipping gives you even colour and crisp on all sides.
- 🌟 Timings For Your Air Fryer: All models are a bit different! Keep checking them after around 6 minutes.
🔨 The Meal Planning Toolbox
🗒️Make Ahead
You can prep the filling a day ahead and store it in the fridge, ready to roll when you need it. Just remove the filling from the fridge 15 minutes before using to allow it to come to room temperature.
🗒️ Batch Cooking
Make double the amount of filling and make a big batch. Freeze the uncooked rolls and fry straight from frozen for around 16-18 minutes.
🗒️ Leftovers & Storage
Cooked spring rolls will keep in the fridge for 2–3 days.
Reheat in the air fryer for around 6-8 minutes until piping hot throughout to keep them crispy.
Reheating in the microwave will make them go soggy.
🗒️Freezing
Freeze uncooked spring rolls flat on a tray, then transfer to a freezer bag or container. Cook from frozen at 190°C for 16–18 minutes.
🍴 How To Serve
These crispy spring rolls go with so many dishes. Here are a few of my favourite ways to serve them:
- As a starter with a little dipping tray of sweet chilli sauce, soy sauce or sriracha mayo.
- Next to noodles or fried rice for a full-on fakeaway dinner. They pair brilliantly with:
- In lunchboxes – the leftover rolls are fab cold or reheated, especially dipped in sweet chilli or soy sauce.
- On a picky tea board – with cucumber sticks, chicken nuggets, samosas, hummus and crackers. My kids love this kind of dinner!
You could even cut them in half and serve as party nibbles with toothpicks and dips!

Air Fryer Spring Rolls
Equipment
- Wok / frying pan
Ingredients
- 15 spring roll wrappers
- 300 g (10.5oz) mushroom stir fry mix or equivalent of cabbage, onion, carrot & beansprouts
- 500 g (1.1lb) minced pork
- 3 cloves garlic minced
- 1 tablespoon ginger finely chopped
- 4 medium spring onions finely sliced
- 1 tablespoon vegetable oil
Sauce
- 1 tablespoon cornflour
- 1 tbp soy sauce
- 1 tablespoon rice vinegar
Cornflour slurry
- 1 tablespoon cornflour
- 1 tablespoon water
Instructions
Make the filling
- Finely chop the garlic, ginger and spring onions.
- Heat the vegetable oil in a frying pan. Cook the garlic, ginger and spring onions for 1–2 minutes.
- Add the minced pork. Break it up and cook until browned -about 3-4 minutes.
- Stir in the mushroom stir-fry veg and cook for 3–4 minutes until softened.
- Mix the soy sauce, rice vinegar and cornflour in a small bowl.
- Pour the sauce into the pan and cook for 1–2 minutes until thick and glossy.
- Let the filling cool before assembling the spring roll.
Assemble
- Place a spring roll wrapper in a diamond shape. Add a spoonful of filling near the bottom middle.
- Fold the bottom corner over the filling, then fold in the sides.
- Roll up tightly and seal the edge with cornflour mixed with water.
- Repeat with the remaining wrappers and filling.
- Lightly spray or brush the outside of each spring roll with oil.
- Air fry at 200˚C / 400˚F for 8–10 minutes, flipping halfway, until golden and crispy.
