Air Fryer Spring Rolls

These Crispy Air Fryer Spring Rolls are crispy, packed with flavour and perfect for a fakeaway treat at home. Filled with pork, mixed veggies, and a homemade sauce, they’re surprisingly easy to make and totally addictive!

Ingredients

  • 15 spring roll wrappers
  • 300 g (10.5oz) mushroom stir fry mix or equivalent of cabbage, onion, carrot & beansprouts
  • 500 g (1.1lb) minced pork
  • 3 cloves garlic minced
  • 1 tablespoon ginger finely chopped
  • 4 medium spring onions finely sliced
  • 1 tablespoon vegetable oil

Sauce

  • 1 tablespoon cornflour
  • 1 tbp soy sauce
  • 1 tablespoon rice vinegar

Instructions

Make the filling

  • Finely chop the garlic, ginger and spring onions.
  • Heat the vegetable oil in a frying pan. Cook the garlic, ginger and spring onions for 1–2 minutes.
  • Add the minced pork. Break it up and cook until browned -about 3-4 minutes.
  • Stir in the mushroom stir-fry veg and cook for 3–4 minutes until softened.
  • Mix the soy sauce, rice vinegar and cornflour in a small bowl.
  • Pour the sauce into the pan and cook for 1–2 minutes until thick and glossy.
  • Let the filling cool before assembling the spring roll.

Assemble

  • Place a spring roll wrapper in a diamond shape. Add a spoonful of filling near the bottom middle.
  • Fold the bottom corner over the filling, then fold in the sides.
  • Roll up tightly and seal the edge with cornflour mixed with water.
  • Repeat with the remaining wrappers and filling.
  •  Lightly spray or brush the outside of each spring roll with oil.
  •  Air fry at 200˚C / 400˚F for 8–10 minutes, flipping halfway, until golden and crispy.

To cook in the oven - preheat to 200˚C/390˚F and cook for 25-30 minutes turning halfway.
Leftovers & Storage
Cooked spring rolls will keep in the fridge for 2–3 days. 
Reheat in the air fryer for around 6-8 minutes until piping hot throughout to keep them crispy. 
Reheating in the microwave will make them go soggy.
Freezing
Freeze uncooked spring rolls flat on a tray, then transfer to a freezer bag or container. Cook from frozen at 190°C for 16–18 minutes.
