🥘 Ingredients You Will Need

✋ Double check all packaging for allergens ✋
- Mushrooms – I use chestnut mushrooms for a bit more flavour, but standard closed cup, baby button or chopped portobello mushrooms work well too.
- Garlic – Fresh garlic can burn at a high heat, so I’ve used garlic powder instead to get that garlicky flavour. Adjust the amount used depending on how garlicky you like them! 1 teaspoon will give you a mild flavour, whereas two will give you a stronger one.
- Soy Sauce: The secret ingredient to add an earthy umami flavour to the mushrooms.
- Olive Oil: or any neutral oil you like
- Butter: Used with the olive oil to make the mushrooms nice and juicy and give them a buttery flavour, salted butter works really well.
- Fresh Parsley: This is finely chopped and scattered over the mushrooms after cooking to give extra flavour.
- Fresh Lemon Juice: To cut through the rich flavours. Use fresh lemon juice, the bottled stuff just doesn't taste the same.

✔️ Make It Dairy-Free: Swap regular butter for a dairy-free variety.
✔️ Make It Soy-Free: Use coconut aminos instead of soy sauce. You can find this at most major supermarkets alongside the other condiments.
✏️ How to Make Air Fryer Garlic Mushrooms

Step 1: Use a damp cloth or a bit of kitchen roll to gently wipe off any dirt from the mushrooms.
Try not to rinse them under water as they soak it up like a sponge, which can make them go soggy in the air fryer.
Step 2: Cut them into thick-ish slices. You don’t want them too thin or they’ll shrivel up while cooking.
Step 3: Pop the sliced mushrooms into a bowl and drizzle over the melted butter and olive oil.
Add the garlic powder, soy sauce, and a good pinch of salt and pepper.
Give everything a good mix so the mushrooms are nicely coated.
Step 4: If your air fryer has a crisper plate, take it out for this recipe – you want all that lovely garlicky butter to stay with the mushrooms.
Tip the mushrooms into the basket (you might need to do two batches depending on your air fryer size).
Step 5: Set the air fryer to 180˚C/350˚F and cook for 10–12 minutes, giving the basket a good shake a couple of times during cooking to help them cook evenly.
Step 6: Once cooked, sprinkle over some freshly chopped parsley and add a little squeeze of lemon juice before serving.

These mushrooms are super versatile:
- Pile them on toast with a poached egg for a cracking brunch.
- Stir them through this vegan mushroom pasta(use dairy-free butter)or with pasta and a splash of cream and spinach.
- Serve alongside steak, roast chicken or veggie sausages.

🗒️ Make Ahead
You can slice the mushrooms and mix with the other ingredients in the morning – just store in the fridge until you’re ready to cook.
🗒️ Batch Cooking
Double the recipe and air fry in two batches. Great for popping into lunchboxes or adding to leftovers the next day.
🗒️ Leftovers & Storage
Pop any leftovers into an airtight container and store in the fridge for up to 3 days. To reheat, chuck them back in the air fryer for 3–4 minutes at 180˚C/350˚ F.
🗒️Freezing
I wouldn’t recommend freezing these – mushrooms go a bit watery and lose their texture once defrosted. They’re definitely best eaten fresh or reheated within a few days.

Air Fryer Garlic Mushrooms
Ingredients
- 250 g (9oz) mushrooms chestnut or closed cup
- 40 g (1.5oz) butter melted
- 1 tablespoon olive oil
- 1-2 teaspoon garlic powder depending on your preference
- 10 g (1 tbsp) fresh parsley finely chopped
- 1 squeeze fresh lemon juice
- salt and pepper to taste
Instructions
- Wipe the mushrooms clean with a damp cloth or kitchen roll – don’t wash them under water.
- Slice the mushrooms into thickish slices.
- In a bowl, mix the mushrooms with melted butter, olive oil, garlic powder, soy sauce & salt and pepper. Toss until the mushrooms are well coated.
- Remove the crisper plate (if you have one) from the air fryer. Place the mushrooms in the air fryer basket. (Cook in two batches if needed.)
- Air fry at 180˚C for 10–12 minutes, shaking the basket a couple of times whilst cooking.
- Once cooked, sprinkle with freshly chopped parsley and a squeeze of lemon juice. Serve immediately.
