Air Fryer Garlic Mushrooms

Ingredients

  • 250 g (9oz) mushrooms chestnut or closed cup
  • 40 g (1.5oz) butter melted
  • 1 tablespoon olive oil
  • 1-2 teaspoon garlic powder depending on your preference
  • 10 g (1 tbsp) fresh parsley finely chopped
  • 1 squeeze fresh lemon juice
  • salt and pepper to taste

Instructions

  • Wipe the mushrooms clean with a damp cloth or kitchen roll – don’t wash them under water.
  • Slice the mushrooms into thickish slices.
  • In a bowl, mix the mushrooms with melted butter, olive oil, garlic powder, soy sauce &  salt and pepper. Toss until the mushrooms are well coated.
  • Remove the crisper plate (if you have one) from the air fryer. Place the mushrooms in the air fryer basket. (Cook in two batches if needed.)
  • Air fry at 180˚C for 10–12 minutes, shaking the basket a couple of times whilst cooking.
  • Once cooked, sprinkle with freshly chopped parsley and a squeeze of lemon juice. Serve immediately.

Notes

Laurens Top Tips 
  • Use A Mix Of Butter & Oil: Butter gives loads of flavour, but the olive oil helps stop it burning in the air fryer. 
  • Don't Wash The Mushrooms: Sounds odd, I know, but mushrooms act like little sponges and soak up water. Just wipe them clean with a damp cloth or kitchen roll instead.
  • Remove The Crisper Plate: If your air fryer has one, take it out for this recipe so all that garlicky buttery goodness doesn’t just drip away.
  • Shake The Basket: Give it a good shake a couple of times while cooking to help the mushrooms cook evenly.
