Oh my..They are incredible!
The sweet, spicy Biscoff spread is stirred through the creamy oats and then topped with crumbled lotus biscuits. It tastes insane! This has got to be one of my favourite treat breakfast recipes.

🤔 What Are Overnight Oats?
Overnight oats are a type of no-cook oatmeal that are prepared by combining rolled oats with liquid ingredients (usually milk or yogurt) and allowing the mixture to sit in the refrigerator for at least 4 hours or overnight. The result is a creamy and delicious bowl of oats that are ready to eat the next morning. They can be flavoured and sweetened with various ingredients, such as fruit, nuts, and sweeteners, and are often considered a healthy and convenient breakfast option.
🥘 Ingredients Needed & Notes
✋ Be sure to double check all packaging for allergens. ✋
- Oats - For best results use rolled oats, also known as old-fashioned oats. You can use quick/instant oats but you will need to reduce the liquid added to 120 ml and bear in mind the texture of the oats will be a lot thinner. I also wouldn’t recommend steel-cut oats or coarse oatmeal for this recipe.
- Chia Seeds - Chia seeds contain antioxidants, minerals, fibre & omega-3 fatty acids. They also contain good amounts of calcium and magnesium. Try and squeeze these into your diet as often as you can. Chia seeds expand and absorb the liquid from the milk, so if you prefer to leave them out of your overnight oats, you will only need to add 120 ml of milk.
- Lotus Biscoff Spread - The star of the show! This silky, smooth, sweet spread with a hint of spice will transform your overnight oats.
- Milk - Any regular dairy or plant based milk can be used. Unsweetened almond milk or oat milk both work really well.
- Vanilla Extract - This is optional but adds an extra sweet dimension to the oats.

Add Milk To Oats
Place the oats in a bowl and add the dairy free milk.
Mix
Place the rest of the ingredients except the lotus biscuits into the bowl and stir until fully combined.
Refrigerate
Transfer the oats to a mason jar or airtight container and refrigerate overnight.
Enjoy!
Take the chilled oats from the fridge - adding a little more milk if you prefer the texture a little wetter. Sprinkle with crushed lotus biscuits and tuck in!
💡 Tips & Tricks
- You may like to warm the Biscoff spread in the microwave for 10 or so seconds to soften it a little. This will make it easier to stir into the oats.
- Make the oats in batches to save even more time. They will keep in the fridge for 2-3 days.
- Although the oats will be ready after 4 hours, do try to leave them overnight if you can. This will really give them time to soak into the milk and create a more creamy texture.
⚡ Substitutions & Variations
- Make It Gluten Free - Use gluten free oats instead of normal oats. You can either make your own gluten free biscoff spread using this recipe from Blue Sky Eating or use a caramel spread like this one and add ½ teaspoon of cinnamon to it to re-create that Biscoff spice. Lotus don’t officially do a gluten free version of the biscuit but these Dr Schar Gluten Free Spekulatius biscuits are the closest alternative.
- Make It Dairy Free / Vegan - Biscoff spread is vegan so that makes it also dairy free. Just be sure to use a dairy free milk and you are good to go.
- Chia Seed Substitutions - You can replace the chia seeds with a spoonful of vanilla flavour protein powder or large tablespoon of plain yoghurt. Greek, soya or coconut yoghurt work well.
🥡 How To Store
Store the overnight biscoff oats in the fridge in a Mason Jar or Airtight Container. They will keep really well for 2-3 days, but may turn soggy after this.

- 50 g jumbo porridge oats substitute for GF if required
- 2 tablespoon biscoff spread
- 2 teaspoon chia seeds
- 160 ml milk plant based or regular
