    I had some ripe bananas in my fruit bowl looking very sorry for themselves, so I Googled "how to use up ripe bananas?"

    Banana ice cream came up again and again in the search results. I nearly didn't click onto any of the web pages as I thought the recipes would be full of ingredients my little girl can't have.I clicked through and boy am I glad I did!

    Seriously... this is AMAZING!! I never expected this to taste like ice cream, as it only contains ONE ingredient.. Bananas, but it really does!

    My kids thought it was delicious and called it "nice cream". You really need to give this a go and I promise that you will looking forward to the times all the bananas don't get eaten so you can make this

    THIS VEGAN BANANA ICE CREAM IS GREAT FOR EVERYONE

    As it only uses bananas in the basic recipe it is perfect for most people as it is..

    HOW TO MAKE ONE INGREDIENT VEGAN BANANA ICE CREAM

    You basically chop bananas, freeze them, blast them in a food processor and voila, you have sweet, creamy banana ice cream!

    Once you have chopped your bananas, freeze them flat on a chopping board or baking tray. This will stop them freezing into one big clump and breaking your food processor!

    Place the bananas in a food processor. I would advise using a food processor over a blender as the frozen bananas are too hard for most blenders.

    At first the mixture will look crumbly and like it won’t mix together. Keep going! After a few minutes it will all come together into a creamy swirl of delight. 

    After each 30 seconds or so, open the lid and give it a stir with a spoon scraping down any banana that is sticking to the sides.

    (You can also add a dash of soya/almond or other milk to speed up the process)

    Once the mixture has reached a creamy consistency, you can either serve it straight away or pop back in the freezer. If you do re-freeze it, you will need to take it out of the freezer around 10 minutes before you would like to eat it to let it soften up a bit. Even more reason to eat it straight away!

    DO YOU NEED TO USE RIPE BANANAS?

    YES!!

    It is a great way to use up the bananas that are just past their best and a bit too squidgy to eat in the traditional way.

    The trick is to use really ripe bananas. The riper the better. They need to have started to go black on the outside. This is because the riper they are, the sweeter ice cream they will make.

    HOW LONG DO YOU NEED TO FREEZE THE BANANAS FOR BANANA ICE CREAM?

    The bananas need at least 2 hours to freeze right through.

    If you have some bananas that are over ripe but you don't have time to make the ice cream right away, no problem!

    Pop them in the freezer chopped into rounds and they can stay like that in the freezer for up to 3 months, when you are ready to use them.

    VARIATIONS & TOPPINGS

    The banana acts as a great base for a number of variations and toppings.

    CHOCOLATE BANANA ICE CREAM

    Add one tablespoon of cocoa power to the food processor with the frozen bananas to whip up a vegan chocolate banana ice cream, this one is a winner with the kids!

    HONEY & VANILLA

    Add a tablespoon of greek or dairy free yoghurt, a splash of vanilla extract and a teaspoon of honey for extra creaminess.

    CINNAMON

    Half a teaspoon of cinnamon stirred into the blended mixture gives a really lovely taste.

    TOPPINGS

    Crushed up cornflakes, grated dark chocolate, strawberries, raspberries, coconut flakes and chopped nuts all work really well. Please check all ingredients for allergens.

    Ingredients
      

    • 2 Ripe Bananas

    Instructions
     

    • Peel your bananas and chop them into 1" slices.
    • Place the bananas on a flat tray, cover with clingfilm and place in the freezer for at least 2 hours until frozen.
    • Remove from freezer and blend in a food processor until smooth and creamy. This may take a little while and you may need to give them a stir a few times whilst doing it.
    • Once smooth and creamy you can eat straight away or put back in the freezer for later!

    Notes

    You can top this ice cream with honey, a sprinkle of cinnamon or flaked almonds.
    If you decide to refreeze the ice cream once blended, you will need to take the ice cream out of the freezer 10 minutes or so before you want to eat it, to let it soften up a bit.
