If you've got leftover turkey hanging around and want to turn it into something comforting and family-friendly, this turkey and ham pie is a brilliant option. It's creamy, cosy, and topped with golden puff pastry & it's also really easy to make!

You honestly wouldn't guess how easy this leftover turkey & ham pie is from how good it tastes. It's a really handy way to use up leftover meat from Christmas Day, especially if you've cooked a joint like my slow cooker gammon in Coke and have bits left sitting in the fridge.

🥘 Ingredients You Will Need

Here is a brief overview of the ingredients you will need to make this leftover turkey & ham pie. To find out how to make it allergy-friendly, simply scroll down to the section below this one.

  • Cooked Turkey & Gammon/Ham - you can also use leftover cooked chicken too.
  • Leek - This is finely sliced.
  • Chicken stock - Or turkey stock if you have any leftover.
  • Double Cream - This helps to create that glossy, creamy sauce. I wouldn't advise using single cream as it isn't thick enough.
  • Dijon Mustard - adds flavour without being overpowering.
  • Cornflour - This is used to  thicken the sauce
  • Puff Pastry - I always use a Jus Rol ready rolled sheet.
  • Egg - for brushing over the pastry, which gives it that lovely golden brown colour.

🥜 How Can I Make This Dish Allergy Friendly?


✔️ Dairy-free: Use a dairy-free cream alternative. 
✔️ Gluten-free: Swap the puff pastry for a gluten-free version, Jus Rol do a gluten-free pre-rolled puff pastry. 
✔️ Mustard-free: Simply leave the mustard out - the pie will still be full of flavour.
✔️ Egg-Free: Use milk to brush over the uncooked pastry as a glaze instead of the egg.

✏️ How to Make Leftover Turkey & Ham Pie

Step 1: Start by heating the olive oil in a large frying pan over a medium heat. Add the sliced leek and cook it gently for a few minutes, stirring occasionally, until it's soft but not browned. 

Step 2: Add the chopped turkey and ham to the pan and give everything a good stir so it's evenly mixed.

Pour in the chicken stock and double cream, then add the Dijon mustard.

Stir well and let it warm through for a minute or two so all the flavours come together.

Step 3: In a small bowl, mix the cornflour with a splash of cold water until smooth, then stir this into the pan.

Let the filling simmer gently for 5-10 minutes, stirring now and again, until the sauce has thickened enough to coat the back of a spoon.

Step 4: Once thickened, spoon the filling into your pie dish and leave it to cool slightly.

This helps stop the pastry from going soggy when it goes on top.

Step 5: Lay the puff pastry over the dish, trim the edges, and crimp to seal.

Brush the pastry with beaten egg, then bake in a pre-heated oven at 200°C (180°C fan) for 25-30 minutes, until the pastry is puffed, golden, and crisp.

Let the pie sit for a few minutes before serving so it's easier to slice.

💡 Lauren's Top Tips

  • 🌟 Let the filling cool slightly: This stops it from making the pastry soggy.
  • 🌟 Cut a small slit in the pastry: This allows the steam to escape while baking. I also do this in my marry me chicken pie.

🔨 The Meal Planning Toolbox

🗒️Make Ahead

You can make the filling earlier in the day and keep it in the fridge. Add the pastry and bake when you're ready.

🗒️ Batch Cooking

Double the filling and freeze half for another meal later.

🗒️ Leftovers & Storage

Store leftovers in the fridge for up to 2 days. Reheat in the oven until piping hot.

🗒️Freezing

Freeze the cooked filling (without pastry) for up to 3 months. Defrost fully before topping with pastry and baking.

🗒️ Reheating

Reheat in the oven at 180°C, with the pie covered in foil, until it's hot all the way through. Reheating in the microwave will make the pastry soggy.

Leftover Turkey and Ham Pie

Equipment

  • Chopping board
  • Sharp knife

Ingredients

  • 250 g (9oz) Cooked turkey chopped
  • 250 g (9oz) cooked gammon chopped
  • 1 sheet ready rolled puff pastry
  • medium leek finely sliced
  • 200 ml (¾ cup) chicken stock
  • 200 ml (¾ cup) double cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cornflour
  • 1 teaspoon olive oil

Instructions

  • Heat the olive oil in a large pan over a medium heat. Add the sliced leek and cook gently until softened.
  • Stir in the chopped turkey and ham, then pour in the chicken stock and double cream. Add the Dijon mustard and mix well.
  • Mix the cornflour with a small splash of cold water, then stir it into the pan. Let the filling simmer for 5-10 minutes, until the sauce has thickened.
  • Tip the filling into a pie dish and allow it to cool slightly. Season with salt (if needed) and black pepper.
  • Lay the puff pastry over the top, trim the edges and crimp to seal.
  • Brush the pastry with beaten egg.
  • Bake at 200°C (180°C fan) for 25-30 minutes, until the pastry is puffed and golden.

  • A great way to use up leftover turkey and ham, especially after Christmas
  • Let the filling cool slightly before adding the pastry to help prevent a soggy base
  • Don't over-season until you've tasted the filling - ham can be quite salty
  • If the sauce thickens too much, loosen it with a splash of stock or cream
  • Ready-rolled puff pastry keeps this quick and easy
