Leftover Turkey and Ham Pie

If you’ve got leftover turkey hanging around and want to turn it into something comforting and family-friendly, this turkey and ham pie is a brilliant option. It’s creamy, cosy, and topped with golden puff pastry & it’s also really easy to make!

Ingredients

  • 250 g (9oz) Cooked turkey chopped
  • 250 g (9oz) cooked gammon chopped
  • 1 sheet ready rolled puff pastry
  • medium leek finely sliced
  • 200 ml (¾ cup) chicken stock
  • 200 ml (¾ cup) double cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cornflour
  • 1 teaspoon olive oil

Instructions

  • Heat the olive oil in a large pan over a medium heat. Add the sliced leek and cook gently until softened.
  • Stir in the chopped turkey and ham, then pour in the chicken stock and double cream. Add the Dijon mustard and mix well.
  • Mix the cornflour with a small splash of cold water, then stir it into the pan. Let the filling simmer for 5–10 minutes, until the sauce has thickened.
  • Tip the filling into a pie dish and allow it to cool slightly. Season with salt (if needed) and black pepper.
  • Lay the puff pastry over the top, trim the edges and crimp to seal.
  • Brush the pastry with beaten egg.
  • Bake at 200°C (180°C fan) for 25–30 minutes, until the pastry is puffed and golden.

Notes

  • A great way to use up leftover turkey and ham, especially after Christmas
  • Let the filling cool slightly before adding the pastry to help prevent a soggy base
  • Don’t over-season until you’ve tasted the filling — ham can be quite salty
  • If the sauce thickens too much, loosen it with a splash of stock or cream
  • Ready-rolled puff pastry keeps this quick and easy
  • Chicken can be used instead of turkey if that’s what you have
  • Best baked and served fresh, but the filling can be made ahead
