This Christmas Leftovers Toasted Sandwich makes the perfect Boxing Day sandwich! Pile it high with turkey, gammon, cranberry sauce & stuffing for a proper, comforting sandwich that uses up all the good bits!

Ok, it's that in-between bit after Christmas and before New Year (Twixmas, I think they call it). You've still got loads of food in the fridge and the last thing you want is another full Christmas dinner - that's where this Christmas leftovers toasted sandwich comes in!

🥘 Ingredients You Will Need

Here's a rough guide to what you'll need for one toasted sandwich. This is very much a "use what you have" recipe, so don't stress about exact amounts.

  • Bread - I love to use sourdough for my sandwiches & my favourite is Jasons sourdough. You will need two slices per sandwich.
  • Cooked Turkey and/or Gammon - slice this thinly
  • Pigs in Blankets - slice these thinly - the saltiness of the bacon works really well.
  • Leftover Stuffing - crumble this over the inside of the sandwich
  • Cranberry Sauce & Brie - A classic taste combo
  • Butter - for the outside of the bread - don't skip this, this is what gives the outside of the sandwich that golden brown crunch.
  • Gravy - for dipping (optional but not optional!!)

✔️ Dairy-free:
Use dairy-free butter and a dairy-free cheese alternative.

✔️ Gluten-free:
Swap the sourdough for your favourite gluten-free bread and check your stuffing & pigs in blankets are gluten-free.

✏️ How to Make A Christmas Leftovers Toasted Sandwich 

⬇️ Here you will find an overview of how to make the recipe. For full information on ingredients and quantities please see the recipe card at the bottom of the page ⬇️

Step 1: Start by buttering one side of each slice of bread. This is what gives you that crisp, golden outside.

Step 2: Lay one slice of bread butter-side down. On the unbuttered side, spread a thin layer of cranberry sauce, then start layering up your fillings.

Add the sliced turkey and ham, crumble over the stuffing, slice the pigs in blankets and scatter them over, then finish with a couple of slices of brie.

Step 3: Top with the second slice of bread, butter-side facing out.

Step 4: To cook, you have two options. In a frying pan, cook over a medium heat for around 3-4 minutes on each side, pressing down gently, until the bread is golden and the cheese has melted.

Alternatively, cook in the air fryer at 180°C for 6-8 minutes, turning halfway, until crisp and heated through.

Slice in half and serve straight away, ideally with a mug of hot gravy for dipping.

💡 Lauren's Top Tips

  • 🌟 Go easy on the filling so the toastie stays easy to flip and doesn't fall apart
  • 🌟 Keep the heat medium so the bread crisps without burning before the middle heats through
  • 🌟 Slice the brie fairly thin so it melts properly
  • 🌟 Eat it straight away while the cheese is still soft and melty

🗒️ Make Ahead

This one is best made fresh, but you can prep all your fillings in advance and assemble when you're ready to cook.

🗒️ Batch Cooking

If you're feeding a few people, assemble multiple toasties and cook them one after another, keeping finished ones warm in a low oven.

🗒️ Leftovers & Storage

The toasties don't store particularly well once cooked, but leftover fillings can be kept in the fridge and used again the next day.

🗒️ Reheating

If needed, reheat in the air fryer or a dry pan rather than the microwave to keep the bread crisp.

🗒️Freezing

This dish is not suitable for freezing.

Can I use different leftovers?

Absolutely. Roast chicken, sausages, roast potatoes (sliced thin), or different cheeses all work well.

Do I need sourdough?


No, use any bread you like, but I find sourdough holds the fillings better.

Equipment

  • Griddle Pan

Ingredients

  • 2 slices sourdough bread
  • 3-4 slices cooked turkey/gammon
  • 1-2 pigs in blankets sliced
  • 1 tablespoon leftover stuffing crumbled
  • 1 tablespoon cranberry sauce
  • 4 thin slices brie
  • 1 tablespoon butter
  • Gravy for dipping

Instructions

  • Butter one side of each slice of bread.
  • Place one slice butter-side down.
  • Spread cranberry sauce on the unbuttered side.
  • Layer with turkey, ham, stuffing, sliced pigs in blankets and brie.
  • Top with the second slice of bread, butter-side out.
  • Pan method: Cook over a medium heat for 3-4 minutes per side, pressing gently, until golden and melted.
  • Air fryer method: Cook at 180°C for 6-8 minutes, turning halfway.
  • Slice in half and serve straight away, with gravy for dipping if you like.

  • Use thick slices of bread (sourdough works well) so the filling doesn't spill out
  • Don't overfill the toastie or it'll be hard to flip and heat through
  • Cook over a medium heat so the bread crisps without burning
