Slow Cooker Gammon In Coke

Gammon
- 2 kg (2.2 lb) gammon joint unsmoked
- 2 litres (67 fl oz) coca-cola full fat
- 1 medium carrot roughly chopped
- 1 medium onion roughly chopped
- 1 teaspoon cinnamon
Glaze
- 3 tablespoon honey
- 1 tablespoon dark brown sugar
- 1 tablespoon wholegrain mustard
Chop the carrot and onion into chunks (skin on) and place in the bottom of the slow cooker.
Add the gammon joint on top.
Pour enough cola to almost submerge the gammon and sprinkle in the cinnamon.
Cook on high for 4-6 hours or low for 6-8 hours. (depending on your slow cooker) The meat is cooked once it reaches an internal temperature of 145˚F - use a meat thermometer to check.
Once the meat is cooked, remove the gammon from the slow cooker and place it in a roasting tin.
Preheat the oven to 220˚C / 200˚ Fan / 425˚F.
Remove any string & most of the fat from the top of the joint with a knife.
Score the remaining fat with a sharp knife into a criss-cross pattern.
Mix the glaze ingredients in a small bowl and using a pastry brush, baste the top and sides of the joint with half the mixture.
Roast in the oven for 15 minutes, then pour over the remaining glaze and roast for a further 15 minutes until the fat is nice and crispy.
Delicious served hot or cold.
Tips & Tricks
- Use A Meat Thermometer: I know I’ve mentioned it before but, everyone needs one of these in their kitchen! The pork is cooked when it reaches an internal temperature of 63˚C / 145˚ F.
- Use As Much Coke As You Need: Depending on the size of your joint, you may need more or less of the 2L stated in the recipe. If you run out of coke, top it up with water.
- Score the fat: Use a sharp knife to score the fat diagonally in a criss-cross pattern. This allows the glaze to penetrate deeper and crisp up the fat.
- Carving Tip: If you know you won't use all the gammon at once, consider carving some slices and leaving the rest whole. Sliced gammon tends to dry out faster than a whole joint.
How Long Per Kg Does Gammon Take To Cook In The Slow Cooker?
A 2.1 Kg joint took around 4.5 hours on the high setting to reach the safe internal temperature of 63˚C / 145˚F in my slow cooker.
I really recommend using a meat thermometer to check when meat is cooked. You can pick up them cheaply on Amazon and it will become your new best friend in the kitchen, trust me!
Timings can fluctuate depending on the weight of your gammon and the make and model of your slow cooker, however, you can use the below timings as a rough guide.
- 1kg: 2-4 hours on high / 5-7 on low
- 2kg: 4-6 hours on high / 6-8 on low
- 3kg: 5-7 hours on high / 7-8 on low
