- 500 g ( 1lb ) steak mince at least 10% fat
- 4 Sesame seed topped brioche burger buns can be substituted for gluten free buns
- 8 slices American processed cheese slices can be substituted for dairy free cheese
Condiments

Divide the beef mince into 8 equal-sized balls. You’ll need two patties per burger.
Place each ball between two pieces of baking paper and flatten into a thin patty, approximately 10–12cm wide and ½cm thick. Make them slightly wider than your burger buns as they will shrink during cooking.
Heat a large frying pan or griddle over a medium/high heat until hot.
Cut the burger buns in half and place them cut-side down in the pan. Toast until lightly golden, then remove and set aside.
Add the burger patties to the hot pan, working in batches if needed. Cook for 3–4 minutes on the first side, then flip and cook for a further 2–3 minutes, or until cooked through.
Place a slice of American-style cheese on 4 of the patties, then top each with a second cooked patty. Leave for 1 minute to allow the cheese to melt.
Spread mayonnaise over the bottom half of each bun and ketchup and mustard over the top. Add the double cheeseburger patties and any extra toppings you’re using.
Place the bun tops on the burgers and wrap each one tightly in foil. Leave for a few minutes before unwrapping and serving. This helps soften the buns and gives the burgers that classic Five Guys-style texture.
Beef: I use at least 10% fat beef mince and divide it into 8 x 62.5g patties.
Thickness: Flatten each patty to approximately ½cm and slightly wider than your burger bun.
Foil: Wrap the assembled burger tightly in foil for 4-5 minutes to soften the bun and help melt the cheese.
Make ahead: Patties can be shaped ahead and kept refrigerated between sheets of baking paper.
Allergies: See the post above for gluten-free, dairy-free, egg-free, mustard-free and sesame-free options.
