How To Make Salmon Katsu Curry

This Salmon Katsu Curry is a twist on the Japanese classic!  Crispy salmon is paired with an aromatic, smooth curry sauce, ideal for a delicious meal to be enjoyed with family or friends.  My version is also egg and dairy free!

Ingredients Needed

Step One:

Cover the salmon fillets with vegan mayo.

Step Two:

Cover the salmon fillets with panko breadcrumbs.

Step Three:

Fry off onions, carrots, chopped garlic, ginger with some curry powder in a pan.

Step Four:

Add flour to the pan, give it a quick stir, then pour in the stock, honey, soy sauce and coconut milk.

Step Five:

Bake the salmon fillets in the oven until cooked.

Step Six:

Use a stick blender to make the sauce super smooth.

Step Seven:

Pour the sauce through a sieve.

Step Eight:

Serve the sauce alongside the baked salmon, white rice and salad.
